Cut the dory fish fillets as in the photo. After that, sprinkle it with salt, garlic powder, and pepper. Leave it for 20 minutes.
Sweet and Sour Sauce: While waiting for the marinade, saute garlic in a little oil until fragrant.
Add water and carrot pieces, and cook until carrots are slightly soft.
Add tomato sauce, vinegar, sugar, salt, and pepper. Stir well until the sauce thickens. Make sure the taste is sour and sweet, if it's not sour enough, you can add a little vinegar or tomato sauce.
Then, add chopped onions, red chilies, and peas (if any). Stir for 30 seconds and turn off the heat.
DRY BATTER: Mix tapioca flour with all-purpose flour, baking powder, garlic powder, and salt. WET BATTER: Mix eggs, water, and all-purpose flour. First, coat the dory fish with the dry batter, then dip it into the wet batter. After that, coat it again with dry batter.
Heat the oil, then fry the dory fillets until golden brown.
Serve fried dory fillets with sweet and sour sauce and serve while warm with white rice.
