Soto or Sroto is a traditional dish that can be found in several regions in Indonesia. Soto is a soup containing pieces of beef/chicken, several types of vegetables, and meat broth. Soto Madura is a type of dish originating from Madura, near Surabaya. The Madurese have four variations of Soto Madura: Soto Eldest, Soto Pamekasan, Soto Bangkalan, and Soto Sumenep. If we look from several sources, Soto Madura is not the original culinary from Madura. At first, it came from the city of Surabaya in 1970. There is a stall that sells Soto Sulung and Soto Madura, this food is named Soto Madura because this food is sold by the Madurese. In the 1970-1980s there was no place that sold Soto Madura in Madura. It was around 1988 that Soto Madura appeared in Madura. The distinctive feature of this Soto Madura is the yellow color of the broth and is usually complemented by potato slices, bean sprouts, vermicelli, fried onions, lime, etc. A lot of spices are used in making this Soto Madura makes the taste even more delicious and flavorful. This one-of-a-kind soup dish is similar to most other regional specialties, in that it uses chicken or beef as its main ingredient. Not only using meat, but this soup can also use offal and some other meat parts. It's easy to make this soto, here's the recipe and steps for making Soto Madura.
Boil the chicken breast with water, and bring to a boil until the chicken is cooked. Take it out, then shred the meat.
Saute all the mashed ingredients, lemongrass, and chopped spring onions until fragrant.
Put the mashed ingredients into the chicken broth, add ½ tsp salt and 8 gr chicken cubes. Then, stir until it boils and make sure it tastes good.
