It's the perfect solution for busy weeknights or those spontaneous culinary cravings. Dutch Croquette is a traditional food from the Netherlands. The word croquette comes from Dutch Kroketten, which can be interpreted as coming from French Croquette. This food was popularized after World War 2 when food suppliers made snacks in large quantities. This Dutch Croquette is very similar to risoles (Indonesian snacks), another type of fried croquette that can be filled with beef/chicken, cheese, vegetables, and other ingredients. Dutch Croquette is a simple dish and easy to make, each country has its version of croquettes. For example, Korokke is a croquette originating from Japan, filled with potatoes, carrots, and onions, usually eaten with tonkatsu sauce. Aloo Tikki is a croquette originating from India, usually stuffed with potatoes and beef. Croquettes themselves are generally made from minced meat which is covered in flour or breadcrumbs and then deep-fried. This Dutch Croquette requires fried and steamed potatoes. Then the potatoes are crushed, then seasoned, then filled with cooked minced meat along with chopped carrots and vegetables. Dutch Croquette is generally round, covered in flour or breadcrumbs, and deep-fried until cooked. It can be eaten with chili sauce/tomato sauce/mayonnaise.

Potato Skin

  • 200g of boiled potatoes, mashed
  • 250g French fries, mashed
  • 1 egg yolk
  • 2 tbsp milk powder
  • 1 tsp salt
  • ½ tsp of pepper
  • 1 tsp nutmeg powder

Croquette Fillings

  • 125g minced beef
  • 2 tbsp butter
  • 2 shallots
  • 2 garlic
  • 1 carrot
  • 4 green beans, cut into cubes
  • ½ tsp pepper
  • ½ tsp salt
  • 1 tsp sugar
  • 1 tbsp flour

Dry and Wet Batter

  • 1 beaten egg, add 1 tbsp of water, stir
  • 100g breadcrumbs

Finely mash the french fries and boiled potatoes.

Add egg yolk, milk powder, salt, pepper, and nutmeg powder, then mix well.

Heat the butter, put all the croquette fillings ingredients, except the flour. Cook until the sauce shrinks, then add the flour, stir well, let it cool.

Make a round shape of potato skins, then flatten them. For each flattened potato skin, put 1 tbsp of croquette fillings on it, then make an oval. Cover with flour, then dip it in the beaten egg, then coat it again with flour. Put it in the refrigerator for 40 minutes.

Remove from refrigerator, croquettes can be fried immediately. Serve with cayenne pepper or mayonnaise.
