Ketoprak Sauce

  • 100g fried peanuts
  • 250 ml of water
  • 7 red chilies
  • 4 garlic
  • 1 tsp vinegar
  • 4 tbsp sweet sauce (kecap manis)
  • 1 tbsp brown sugar
  • 1 tsp salt


  • White tofu, soaked in salt water, then fried
  • Rice cake (lontong/ketupat)
  • Bean sprouts
  • Vermicelli
  • Boiled eggs (optional)
  • Fried shallots
  • Crackers (kerupuk)
  • Chili sauce (sambal)



Boil the vermicelli and bean sprouts, then put them on a plate.

Step 1 of cooking Ketoprak.

Prepare cubes of rice cake (lontong/ketupat) and fried white tofu.

Step 2 of cooking Ketoprak.

Add 2 tbsp oil into the pan, fry the peanuts until slightly browned, but don't burn.

Step 3 of cooking Ketoprak.

Combine and blend the fried peanuts, water, red chilies, garlic, and vinegar.

Step 4 of cooking Ketoprak.

Put the blended mixture in a pan, then add the sweet sauce (kecap manis), brown sugar, and salt. Stir until it boils, ensuring it tastes well-balanced. If it lacks sweetness, add 1 tbsp of sweet sauce (kecap manis).

Step 5 of cooking Ketoprak.

Arrange the rice cake, vermicelli, fried tofu, and bean sprouts on a plate, then generously drizzle the ketoprak sauce over them. Serve Ketoprak with fried shallots, crackers, and sambal.
