The dish became popular in Singapore due to its simple yet delicious flavor, and it has since become one of the city-state's most iconic dishes. This delicious yet so aromatic Hainanese Chicken is very popular, obviously, in Singapore. The dish is made by boiling the chicken in a mixture of ginger and garlic. Then, simmer the chicken in this mixture until cooked. While cooking the chicken, steam the rice with pandan leaves to infuse it with flavor. Or you can cook the Hainanese rice with the chicken broth to add the special Hainanese flavors. Serve the Hainanese Chicken along with chili sauce or green onions, and fried garlic. Ingredients

  • 2 chicken breasts, about 500g
  • 1200 ml of water to boil the chicken
  • 3 garlic, finely chopped
  • 2 cm ginger, thinly sliced

Hainanese Rice

  • 2 cups of raw rice, wash thoroughly (1 cup = 150g)
  • 3 cups of chicken broth (1 cup = 150 ml)
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp chicken powder
  • ½ tsp salt
  • 2 tsp coriander powder or 1 coriander leaves, thinly sliced

Sambal (Chili Sauce)

  • 8 red chilies
  • 4 garlic, finely chopped
  • 8 tbsp chicken broth
  • ½ tsp salt
  • 1-2 tsp vinegar

Complementary

  • Cucumber

Add the chopped garlic and sliced ginger to the boiling water. Put the chicken breasts in the boiling water for 10 minutes, then remove the chicken and put it into cold water, and let it rest for 5 minutes. Do this up to 3 times, and finally, let stand in boiling water until the chicken is tender.

Place the chicken on a plate. Add soy sauce and sesame oil as desired.

Hainanese Rice: Prepare raw rice that has been washed clean, then put it in the rice cooker's bowl. After that, add all the ingredients for the Hainanese Rice (see the recipe above). Stir well, and cook it with a rice cooker until cooked.

Sambal (Chili Sauce): Blend all the ingredients for sambal (see the recipe above), and set aside.

Serve the Hainanese Chicken along with Hainanese Rice, sambal, and cucumber. For the soup, you can use the chicken broth, add salt and pepper as desired, then serve it with the Hainanese Chicken.
