Butter Fried Chicken is a dish that originated in Indonesia. Fried chicken is a typical Indonesian dish cooked by frying the chicken in hot oil. This fried chicken is different from the western version of fried chicken, where the chicken is coated in flour and fried. Fried chicken in Indonesia is only marinated with spices, then fried in hot oil. To make Butter Fried Chicken, it will need a certain spice mixtures. The spice mixtures may vary from region to region but generally consists of a combination of garlic, shallots, turmeric, lemongrass, bay leaf, tamarind water, galangal, mashed candlenut, with sugar and salt. The chicken pieces are marinated in the marinade sauce for a few minutes before frying it so that the spices are fully absorbed into the chicken meat. Butter Fried Chicken usually takes a long time, because the chicken has to be marinated first so the marinade sauce absorbs into the chicken before being grilled and fried. It's covered with special seasonings consisting of spices, such as garlic, soy sauce, and pepper. Almost everyone, both young and old, likes Butter Fried Chicken because it tastes delicious and savory, and usually comes with lime, vegetables, chili sauce, or sweet sauce.
Marinate the chicken with marinated sauce for 15-20 minutes.
Place the chicken on a baking pan, pour the remaining marinated sauce over the chicken and add 4 tbsp of oil to the pan to prevent the chicken from sticking. Bake for 20-25 minutes at 175°C until the chicken is lightly browned.
Fry the chicken that has been removed from the oven until cooked.
Saute the onions and garlic with 3 tbsp of butter until fragrant.
Add pepper, Worcestershire sauce, and sweet sauce. Stir well.
Add the fried chicken, stir well with the sauce, so the sauce soaks into the chicken. Turn off the heat when it's boiling and thickens slightly, make sure it tastes as desired.
Put on a plate, serve the butter fried chicken with lime and warm rice.
