Balado Eggplant is a famous Indonesian food. This food can be found in Padang, especially in Padang restaurants. In general, eggplant can be fried before being cooked with balado sauce, but you can also boil the eggplant if you don't like fried eggplant. Several kinds of eggplant can be cooked as a side dish, there are purple eggplant and green eggplant. This type of side dish provides vitamins and minerals needed by our body. For Balado Eggplant, we will be using purple eggplant. The ingredients are very simple, consisting of shallots, garlic, some red chilies, and other spices. Balado is a spicy red sauce mixed with chunks of red chili sauce, which can be mixed with a variety of other foods. Meat or vegetables that can be made with this Balado sauce include beef, chicken, shrimp, squid, eggplant, eggs, potatoes, etc. For the meat, usually, it has to be sauteed first so that the meat is cooked, then mixed with Balado sauce. Saute the eggplant in oil until it's brown, remove from heat, and put it on a plate.
Balado sauce: Mash the red chilies, garlic, shallots, tomato/tomato paste, salt, and sugar. Then cook briefly with oil until fragrant, remove from heat.
Pour the Balado sauce on the cooked eggplant, and it's ready to eat!
