An Indonesian rice dish from Central Java, usually combined with other complementary. It's a very simple bogana with a few complementary, but still taste yummy! :)
Easy to cook and delicious Simple Bogana.

Bogana Rice is a type of dish that has a lot of side dishes, usually served with warm rice, sambal, and lalapan. Bogana is similar to Nasi Campur. This dish comes from Central Java, to be precised in the city of Tegal. Usually this bogana rice is wrapped in banana leaves. Side dishes that can be used for bogana include boiled eggs, chicken opor, beef jerky, serundeng, sambal, and lalapan. Lalapan is raw vegetables that can be eaten directly with bogana rice, for example cucumber, lettuce and basil leaves. The ingredients which can be used to make sambal bogana are shallots, red chili, tomatoes, a little salt and sugar, then blended and sauteed until fragrant.   • 500g of breast chicken
  • 4 eggs
  • 8g tamarind water
  • 20g galangal
  • 3 bay leaves
  • 1 lemongrass
  • 130 ml thick coconut milk
  • 900 ml liquid coconut milk
  • 1 tsp chicken powder
  • 2 tsp salt

Mashed Ingredients

  • 10 shallots
  • 3 garlic
  • 3 tsp turmeric powder
  • 6g galangal
  • 3 tsp coriander
  • 1 tsp cumin

Chili Sauce

  • 10 red chilies
  • 8 shallots
  • 1 tomato, cut into small pieces
  • 1 tsp sugar
  • 1 tsp salt



Blend all ingredients, then saute with oil until fragrant.

Put in the chicken breast and egg, stir until the chicken is cooked.

Step 2 of cooking Simple Bogana.

Then pour with liquid coconut milk, add tamarind water, galangal, bay leaves, and lemongrass. Leave it until the chicken is tender and boiling.

Pour the thick coconut milk, chicken powder, and salt. Cook until the sauce is slightly thick, and make sure it tastes as desired.

Take the chicken breast, shred it like in the photo.

Sambal: Saute all ingredients of chili sauce. Serve with warm rice, shredded chicken, egg and cucumber slices.
